Fungal enzymes, traditional fermented foods and composting studies need moist solid substrate rather than liquid. This system holds 1–100 kg in a tray, drum or stirred bed, controlling 20–60 °C and humidity of 40–95% RH, with air blown up through the substrate. Substrate is steam sterilised, and mixing is by periodic turning or continuous agitation.
