The boiling stage needs a bath that reaches the boil on time and holds it unattended. This 31 L stainless bath uses 4 kW of heating to boil from 20 °C in 30 ± 5 min, then holds for a programmable 180 ± 5 min. It takes 12 moulds or pats, and a low-water cut-off protects the heaters.
